Beets

POTENTIAL HEALTH BENEFITS:
-Contain powerful nutrient compounds that help protect against heart disease, birth defects and certain cancers especially colon cancer
-Antioxidant and potent inhibitor of cell mutation caused by nitrates.
-Beets purify the blood, alleviate constipation, aid the liver and promote menstruation

NUTRIENT PROFILE:
-Contains folate, potassium, sodium, vitamin C, A,flavinoids and manganese.

CULINARY USES:
BEETS are best lightly cooked, as their anti-cancer activity is diminished by heat. Best eaten pickled, shredded in salads, soups, roasted and steamed.

TIP:
BEETS have the highest sugar content of all veggies yet are very low in calories. Our daily requirement of folate is 400mcg, 1 cup of boiled BEETS contain 136mcg!
