Spinach

POTENTIAL HEALTH BENEFITS:
-Supports functions of large intestines, stomach, liver and vision
-Especially useful for easing constipation for frail and elderly
-People prone to kidney stones or gallstones are advised to eat spinach sparingly as it contains oxalic acid
-COntains cancer fighting antioxidants
-Higher in protein and iron than most vegetables but less than 2% of the iron content is digested/absorbed by the body once eaten

NUTRIENT PROFILE:
Useful amounts of magnesium, vitamin A, C, K, calcium,
phosphorus, potassium and fibre.

CULINARY USES:
Can be eaten raw, steamed, blended into dressings or dips, in salads, soups, stir fries, pasta sauces, casseroles and many other recipes.

TIP:
SPINACH is best eaten cooked as this allows the body to more readily absorb the
nutrients. Raw SPINACH is harder for the body to digest.
