6 handfulls of organic spiral pasta or pasta of choice
1/4 cup butter or olive oil
4 cloves garlic, minced
1 cup heavy cream or soy milk
zest of 1 organic lemon
1/3 cup grated romano cheese
1/3 cup chopped fresh chives
2 tsp fresh squeezed lemon juice
1/4 - 1/2 tsp salt
fresh ground pepper
2 tbsp minced fresh oregano or basil or 1 tsp dried
Cook the pasta in boiling water until al dente. Meanwhile, cook the garlic in the oil or butter for 2 minutes; add the cream or soy milk and simmer til slightly thick. Add the rest of the ingredients and stir gently until the cheese is melted. Pour the sauce over the drained pasta and toss gently. Serve immediately.
