Polynesian Bars
2 cup dates, chopped
1 cup raisins
20 oz can pineapple, unsweetened, crushed (in its own juice)
¾ cup water
1 tsp vanilla
1½ cup whole wheat pastry flour
1½ cup rolled oats
½ cup coconut
½ cup nuts, chopped
¾ cup oil
Instructions:
Combine the dates, raisins, pineapple, water and vanilla in a pan. Bring to a boil, reduce the heat to low, and simmer (uncovered) until the mixture is thick. Stir occasionally while cooking. Once the mixture thickens, remove it from heat and set it aside.
In a bowl, mix together the flour, oats, coconut, and chopped nuts. Add the oil and mix with your hands until well-blended. Evenly press half of the mixture into the bottom of a 7 x 11" baking dish. Spread the date mixture over this crust, then sprinkle the rest of the flour mixture on top.
Bake at 350ºF for30 minutes. Cut into bars. Let the bars cool before removing them from the pan.
