California Baby Green Salad
4 cups baby greens
1/4 of a small sweet onion, sliced
1 avocado, cut in small pieces
15 pitted black olives
Dressing:
2 Tbsp wine vinegar
2 Tbsp orange juice
1 Tbsp chopped fresh oregano (or 1/4 tsp dried)
1 tsp Dijon mustard
1 clove garlic, put through crusher or finely minced
1/4 tsp granulated sugar
1/4 tsp salt
1/4 tsp ground pepper
Instructions:
In a large bowl, combine greens with salad ingredients. Whisk together dressing in a glass measuring cup or jar and toss everything together well.
Makes 4 side salads. OR, add 1 can of tuna, broken into chunks, to make 2 dinner salads.
