1 pound medium organic tofu
3 tbsp miso
About 2 tbsp tahini
2-3 tbsp flax oil
Juice of 1 small lemon or 3 tbsp brown rice vinegar
4-5 green onions, finely chopped
Fresh parsley and/or cilantro, to taste, finely chopped
1/4 cup or so flake or engevita yeast
Braggs liquid, to taste
Quick & easy to make. A welcome, nutritious alternative for sandwiches!
Mash tofu with potato masher or fork. Mix & mash as you add all other ingredients. Use as a sandwich spread 1/2 inch thick on the bread with cucumber, lettuce, etc. May also be used on crackers or veggies. Makes about 2 1/2 cups spread. Keeps 4-5 days in fridge.
