Tomato Surprise Soup
1 tbsp butter or vegetable oil
1 tbsp minced fresh garlic
1 large onion, chopped
3 cups thinly sliced cabbage
3 cups chopped fresh tomatoes or 2 1/2 cups canned chopped tomatoes
4 tbsp basil/olive oil concentrate (or pesto)
2 bay leaves
1/4 tsp minced or crushed rosemary
2 cups water or vegetable broth
optional: whipping cream or sour cream for garnish
Instructions:
Saute the garlic and onion in the butter until soft but not brown. Add the rest of the ingredients except the optional garnish and simmer for 20 minutes until cabbage is soft. Serve with a dollop of sour cream or whipping cream if desired - though it is delicious without.
Serves 3 - 4
Variations: If you want a soup that will “stick to your ribs”, add mild flavoured, pre-cooked beans such as lima or great northern beans. Then serve with a grain product such as flat breads or buns for a complete protein meal.
