Fresh Bruchetta on French bread
Combine the following and chill until needed:
2 tbsp minced green onion
4 cups diced tomato
2-4 cloves garlic, minced
1 jalapeno, diced (opt)
1/4 tsp salt
1/4 tsp fresh ground pepper
2 tbsp lemon juice
2 tbsp olive oil
1/4 cup fresh basil
1 tbsp minced cilantro (opt)
1/2 finely minced red pepper
1 cup grated Parmesan Cheese for sprinkling on top afterwards.
Instructions:
Slice French bread thickly, place under the broiler for a moment to lightly toast, remove from oven, turn over and cover generously with topping, place on a platter and serve.
