Red Wine Vinegar Marinade



  • 34 c olive oil
  • 12 c tomato sauce
  • 4 Tbsp red wine vinegar
  • 14 tsp cayenne pepper
  • 3 Tbsp chopped fresh cilantro (or fresh basil)
  • Salt & pepper
  • 4 -5 large fresh garlic cloves, crushed
  • hot sauce (optional)
  • 4 lbs uncooked prawns
  • 2 tsp of arrowroot or cornstarch powder (optional)

Make it

  1. In a bowl whisk together all ingredients (except garlic) and taste to adjust salt, cayenne and hot sauce.
  2. Add in the crushed garlic.
  3. Set the uncooked shrimp skewers in a shallow dish so that they lay flat in it.
  4. Pour marinade onto the skewers  and coat evenly.
  5. Cover and refrigerate NO MORE than 1 hour.
  6. Remove the prawns and pour leftover marinade in  cooking pan to make sauce for serving.
  7. optional:  Bring the pan to medium-high heat, whisk in 2 tsp of arrowroot or cornstarch and simmer until it looks like a nice coating sauce.
  8. Grill, or BBQ over medium heat until no longer translucent (about 3 minutes, depending on the size of the prawns).
  9. Serve with the sauce.
