• 2 tbsp minced green onion

  • 4 cups diced tomato

  • 2-4 cloves garlic, minced

  • 1/4 tsp salt

  • 1/4 tsp fresh ground pepper

  • 2 tbsp lemon juice

  • 2 tbsp olive oil

  • 1/4 cup fresh basil

  • 1/2 finely minced red pepper

  • 1 cup grated Parmesan Cheese for sprinkling on top afterwards.

Optional Ingredients

  • 1 jalapeno, diced

  • 1 tbsp minced cilantro

  • Baguette or any tasty bread, preferably slightly stale

  • Capers

Make It

  1. Combine all ingredients except bread and chill until needed.

  2. Slice bread thickly, place under the broiler for a moment to lightly toast, remove from oven, turn over and cover generously with topping, place on a platter and serve.

Bruschetta (Italian pronunciation: [bruˈsketta]  is an antipasto from Italy consisting of grilled bread rubbed with garlic and topped with olive oil, salt and pepper. Variations may include toppings of tomato, vegetables, beans…etc. This was a way of salvaging bread that was going stale. In some countries, a topping of chopped tomato, olive oil and herbs is sold as bruschetta.
