Avocado Mango Chicken Salad


Perfect as a side dish, or as a light lunch in a sandwich, croissant or on a bed of fresh greens! This salad is a great way to use leftover chicken, too.

Makes 2 servings.


1 cup cooked chicken (boneless thighs or breasts), cut into bite-sized cubes

1 avocado, diced

3/4 cup diced fresh mango

3 tbs diced red onion

2/3 cup plain yogurt

Juice of 1/2 lime

1/4 tsp garlic powder

Parsley or Cilantro to  garnish

salt to taste

 Make it

Mix together all of the ingredients (except garnish) in a bowl. Garnish with parsley or cilantro.
