Banana Spice Cake

Ingredients

  • 1 cup butter, softened at room temperature
  • 1¼ cup sugar
  • 5 eggs, at room temperature
  • 2 cup almond flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 2 tsp banana extract *
  • 1 tsp vanilla

Instructions

  1. Cream butter and sugar well.
  2. Add eggs, one at a time, beating well after each.
  3. Mix almond flour with baking powder and spices.
  4. Add egg mixture and beat well.
  5. Add banana and vanilla extracts.
  6. Pour into a greased 9×10″ or 9×13″ pan.
  7. Cook at 350ºF for 30 minutes or until golden brown on top.

Note

you can substitute any flavored extract for variation.
