Mushroom Miso Gravy
Ingredients
- Olive Oil
- ¼ cup diced onion
- 1 cup thinly sliced mushrooms
- 1 stalk celery, finely diced
- 1 carrot, finely diced
For the Gravy:
- 1/3 cup unbleached flour
- ¼ cup nutritional yeast
- 1 tsp salt
- ½ tsp dill weed and basil
- pinch thyme
- 1 ½ cups water
- 2 tbsp. light miso.
Method
- Gently simmer sauté with a little Olive Oil the onion, mushrooms, celery, carrot.
- Mix together the gravy ingredients in a jar with a lid, shake well.
- Add to the cooked vegetables and stir, on medium heat until thickened, about 5 minutes.
- Remove from heat and stir in the miso.
