bruschetta pasta

Everything you love about bruschetta, tossed with your favourite pasta – simple, flavourful, + seasonal – what’s not to love!

Yields : 4 people


2 – 3 large very ripe tomatoes, diced
2 large cloves of garlic, minced or grated
3/4 cup fresh basil, packed and chopped
1/2 cup olive oil
salt and pepper to taste
pasta for 4 people (spaghetti, rotini or spirals work best)


cook pasta according to package directions
to make the bruschetta, combine tomatoes, garlic, basil, olive oil, salt and pepper in a large bowl and mix well
drain pasta, combine with bruschetta and mix
top with grated parmesan
