Chocolate Chip Cookies
Ingredients
- 1 cup butter
- 2 cups sugar
- 1 tsp salt
- 2 eggs
- 2 tsp vanilla
- 2 ½ cups rice flour
- ½ cup potato flour
- 1 tsp baking soda
- 1 ¾ cups chocolate chips
Instructions
- Preheat oven to 375°F.
- Cream together the butter, sugar and salt.
- Beat in eggs and vanilla until fluffy.
- Mix in well the rice flour, potato flour and baking soda.
- Mix in the chocolate chips.
- Drop by teaspoonfuls 2” apart on non-greased cookie sheets.
- Bake for 12 to 15 minutes or until golden brown. Let cool for 1 minute then loosen cookies.
- Let cool completely before putting in storage container.
- Makes about 6 dozen.
