Chocolate Chip Cookies

Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 1 tsp salt
  • 2 eggs
  • 2 tsp vanilla
  • 2 ½ cups rice flour
  • ½ cup potato flour
  • 1 tsp baking soda
  • 1 ¾ cups chocolate chips

Instructions

  1. Preheat oven to 375°F.
  2. Cream together the butter, sugar and salt.
  3. Beat in eggs and vanilla until fluffy.
  4. Mix in well the rice flour, potato flour and baking soda.
  5. Mix in the chocolate chips.
  6. Drop by teaspoonfuls 2” apart on non-greased cookie sheets.
  7. Bake for 12 to 15 minutes or until golden brown. Let cool for 1 minute then loosen cookies.
  8. Let cool completely before putting in storage container.
  9. Makes about 6 dozen.
