Yield: 2 cups of fruit = 1.5 cups of jam | Time: 20 minutes
2 cups of chopped fruit
2 tbsp chia
1-2 tbsp maple syrup, honey or sugar
1-2 tbsp of fresh lemon juice
Remove seeds and skin from fruit, and chop into small pieces
Cook fruit in pot on medium heat until it breaks down and becomes syrupy
Remove from heat and stir in sweetener and lemon juice
Add chia seeds and stir to combine
Let stand for 5 minutes until thickened and add more chia seeds if needed until you get desired thickness
Transfer to jar or container and enjoy.
Store in the fridge for about 2 weeks. The jam will thicken further and become more set once completely chilled. The jam can also be frozen for up to 3 months; thaw in the fridge before using.
