Really Good Cornbread


For the wet mix:

  • 1 ½ cups applesauce
  • 1/3 cup Coconut Oil
  • 1 ¼ cups rice milk
  • 1 Tbsp oil for the pan

For the dry mix:

  • 1 cup brown rice flour
  • 1 ½ cups fine cornmeal
  • 2 tbsp. tapioca flour
  • ½ tsp sea salt
  • 2 tsp baking soda


  1. Pre-heat the oven to 350 °F (175 °C) before you start.
  2. Stick a cast iron skillet or heavy baking pan in the oven to heat up, when hot remove from oven, lightly coat with oil and add batter.
  3. Add wet mix to the dry mix and stir well and pour into the heated and oiled pan, return to oven and bake for 45 to 50 minutes, cool somewhat before removing from pan.
