Spring Spinach + Strawberry Salad

with balsamic dressing

ingredients
3 cups fresh spinach
1 cup strawberries, sliced
 cup red onion, thinly sliced
1 avocado, sliced
½ cup pecans, toasted (optional)
goats cheese, sliced

for the dressing:
6 Tbsp extra-virgin olive oil
¼ cup balsamic vinegar
1 tsp honey
1 garlic clove, minced
2 tsp Dijon mustard
salt + pepper


method
If toasting pecans, place in moderate oven until slightly toasted.
Place spinach, strawberries, and red onion in a salad bowl.
In a Maison jar, add the vinegar, olive oil, honey, garlic, mustard, salt, and several grinds of pepper and shake to combine.
Add some of the dressing to salad and toss to combine.
Add the pecans and feta and gently toss.
Place sliced avocado on top.
Add more dressing, as desired.
Season to taste with salt and pepper and serve.
