ingredients
3 cups fresh spinach
1 cup strawberries, sliced
⅓ cup red onion, thinly sliced
1 avocado, sliced
½ cup pecans, toasted (optional)
goats cheese, sliced
for the dressing:
6 Tbsp extra-virgin olive oil
¼ cup balsamic vinegar
1 tsp honey
1 garlic clove, minced
2 tsp Dijon mustard
salt + pepper
method
- If toasting pecans, place in moderate oven until slightly toasted.
- Place spinach, strawberries, and red onion in a salad bowl.
- In a Mason jar, add the vinegar, olive oil, honey, garlic, mustard, salt, and several grinds of pepper and shake to combine.
- Add some of the dressing to salad and toss to combine.
- Add the pecans and feta and gently toss.
- Place sliced avocado on top.
- Add more dressing, as desired.
- Season to taste with salt + pepper and serve.
