These vegan cookies are made with just a handful of ingredients and are tasty, soft and easy. What more could you ask for? You can whip up a batch of them in 20 minutes, are best enjoyed warm straight out of the oven, and store and freeze well for later munching.
The hardest part is that the cookie dough is so good, they might not make it into cookie form.
ingredients
½ cup smooth almond butter
½ cup maple syrup or agave
2 Tbsp applesauce or melted coconut oil
1 tsp vanilla extract
1 cup whole wheat pastry flour or all-purpose flour
½ tsp baking soda
½ tsp salt
½ cup mini chocolate chips (vegan, if desired)
method
Move your oven rack to the top-middle position.
Preheat the oven to 350 degrees.
Combine the almond butter, maple syrup, applesauce, and vanilla until smooth.
Stir in whole wheat flour, baking soda, and salt.
Add in the chocolate chips. The dough will be a bit sticky.
Drop rounded tablespoons onto a cookie sheet.
Bake for 9-11 minutes until lightly browned on top.
