Simple, classic, and a little zesty. This easy lavender mocktail with lemon and honey is filled to the brim with flavour, antioxidants, and prebiotics. It gets the balance just right – floral without being fussy, bright without being sharp. Best enjoyed outdoors, feet up, on a warm afternoon.
ingredients
2 cups water
½ cup dried culinary lavender
½ cup honey
1 cup fresh lemon juice (about 6-8 lemons)
4 cups sparkling water
Ice cubes
Fresh lavender sprigs + lemon wheels for garnish
method
LAVENDER SYRUP
Add water, dried lavender, and honey to a saucepan. Heat over medium heat until it starts to simmer. Remove from heat and let steep for 15 minutes. Strain through a fine mesh strainer and let cool completely.
FOR EACH DRINK
Fill glasses with ice cubes. Pour 2 Tbsp of lavender syrup and 2 Tbsp of lemon juice into each glass. Top each glass with sparkling water and stir gently with a spoon. The ratio should be about 1 part syrup, 1 part lemon juice, and 4 parts sparkling water. Garnish with a fresh lavender sprig + lemon wheel.
